My mother in-law just sent me a very cool book “Feast” published by AlterNet that covers food/health and environmental issues that we should all be concerned with. Topics include “The startling effects of going vegetarian for just one day” the latter article discusses not only the environmental impact but the health impact and the health care industry impact food production and consumption has upon these facets of our society. One quote straight out of the book: “Did you know according to the Environmental Defense, if every American skipped one meal of chicken per week and substituted vegetarian foods instead, the carbon dioxide savings would be the same as taking more than half a million cars off the U.S. roads”.
